Let The Good Times Pour

AWARD WINNING BOURBON!

Laissez Versez aims to revive Bourbon-making in Louisiana by creating a high-quality local craft Bourbon with rich history and unique flavors. We prioritize using local ingredients and vendors, and take pride in being a part of the distilling community.

Our goal from day one was to create a Louisiana Bourbon that’s easy on the palate. We do this by using high quality barrels to capture a Bourbon that’s pleasant on the nose with strong notes of oak, vanilla, and hints of caramel, leading up to a long savory finish.

OUR PROCESS

Mashing

Grains are mixed with water to create a mash. This process converts the starches in the grains into fermentable sugars.

Fermination

Yeast is added to the cooled mash, which ferments and turns the sugars into alcohol, creating a "distiller's beer."

Distillation

The fermented mash is heated in a still, separating alcohol from water. The alcohol vapor is collected and condensed into a clear liquid called "white dog."

Rehydrating White Oak Barrels

Water is added to the tops of the new barrels to rehydrated the barrels.

Barreling

The clear spirit is poured into the prepared charred oak barrels and stored in our warehouse.

Monitoring Aging

Tasting is done throughout the aging process so to measure the length of time needed to ensure the best results.

Aging

The bourbon ages for several years in the barrels, absorbing flavors and color from the wood.

Quality Control

Before bottling, experts taste the aged bourbon to ensure it has developed the desired flavors and quality.
